To make Doi Begun, we will need…
INGREDIENTS :
1. Brinjal – Sliced in thin circular pieces
2. Salt & Sugar
3. Turmeric
4. Chilly Powder
5. Maida Flour
6. Mustard Oil
7. Curd
8. Ginger Paste
9. Chopped Coriander Leaves and Green Chillies to garnish
METHOD :
Firstly mix the circular pieces of the sliced brinjal with salt, turmeric, a bit of chilly powder, sugar and dry maida flour and fry those well in mustard oil and put them out. Now take some curd in a bowl and add sugar and salt to it and mix it well. Now add a bit of ginger paste and chilly powder to the fried oil of the brinjal and fry it for some time and then pour the whole curd to that and cook for some time and then pour the whole mixture on top of the fried brinjals. Then garnish with some chopped coriander leaves and green chillies and your Doi Begun will be ready to serve.
